I found a veggie squash stew recipe on the web that looked good, but I didn't have any squash. It looked interesting though. The spices are what attracted me to it. Chili, cinnamon, lemon juice and cumin made me think of Morocco. All I had was some kidney beans rather than the lighter pinto beans. I threw in 3 small potatoes. I didn't read the comments, either.
This turned out to be super easy. I would have reduced the amount of chili I used if I'd read the comments first. It turned out fine. So good, I am about to have the leftovers tonight, the night after making it!
